Easy as 123 Ribs
Well actually are 321 ribs and there are variations of these ribs all over the internet. When you live in Washington, good smoked meats are hard to come by. So I had to take matters into my own hands. I got a pellet Pit Boss Pellet smoker. I being a Kansas city Kid and a fan of KC BBQ have found a need to make my own ribs in that style. I scoured the internet and mostly liked the methodology of traeger grills and then I needed some inspiration for a dry rub which I got here.
321 In a nutshell
3 hours of smoking @ 180-200 degrees
2 hours wrapped cooking @ 225 degrees
1 hours unwrapped with favorite BBQ sauce glazed on ribs
Step 1 -3 hour smoking smoking Dry Rub process

Rib baste
1/3 cup of mustard
1/4 cup apple juice/apple cider vinegar
1 T Worcestershire sauce
Mix in a bowl and Baste the ribs with mixture
The Dry Rub

6 T brown sugar
3 T Garlic Salt
3 T Black Pepper
3 T Paprika
1 T Cayenne Pepper
Mix in a bowl and rub on the ribs
Place the ribs in Smoker on smoke setting for 3 hours

Step 2 2 hours in Foil
1.Make a foil boat for each rack of rib
2. Pour 1/4 cup of apple juice on each rack
3. cover with foil
4. Place in smoker @ 225 for 2 hours
Step 3 1 hour Without Foil
1. Remove foil
2. Baste ribs with favorite BBQ sauce ( If I can get Kansas City Joes BBQ I would use that But usually I can get Stubbs Sweet heat will do in a pinch)
3. Cook @ 250 degrees for up to an hour. Wait for desired caramelization of the sauce on ribs
